Daddy Hern's Turkey Burgers

1lb - ground turkey
1/2 cup - Daddy Hern's Hickory flavor barbecue sauce
2 - minced scallions
1/2 teaspoon - ground black pepper
1/4 teaspoon - granulated garlic
1 Tbsp - olive oil
4 - sesame seed hamburger buns

In a large bowl, mix the turkey, 1/4 cup barbecue sauce, scallions, salt, black pepper, and garlic until well blended. Shape into 4 patties. Heat the olive oil in a large non-stick skillet over a medium heat. Cook 12 minutes, turning twice and brushing twice with the remaining barbecue sauce. Make sure the patties are cooked through. Place the patties on toasted buns and garnish with your favorite condiments.

Daddy Hern's Honey Burgundy Meat Loaf

2lb - ground beef
1/2 cup - grated cheddar cheese
1/2 cup - bread crumbs
2 Tbsp - chopped parsley
1/2 cup - Daddy Hern's Honey Burgundy barbecue sauce
1 - egg
1 teaspoon - salt
1 teaspoon - Worcestershire sauce
1/2 teaspoon - ground black pepper

In a large mixing bowl, combine the ground beef, cheddar cheese, bread crumbs, parsley, barbecue sauce, egg, salt, Worcestershire sauce, and black pepper. Thoroughly mix the ingredients and then press into an 11x7x3 inch casserole dish. Bake for 1 hour at 350 degrees F.

Makes 6 - 8 servings.

Daddy Hern's Old Fashioned Baked Beans

1 (12 oz) package - dry navy beans
1 (12 oz) package - dry kidney beans
2 quarts - water
2 teaspoons - salt
1/2 lb - smoked bacon ends
2 - small bay leaves
1 - chopped leek
1 cup - chopped onions
1/3 cup - brown sugar
6 oz can - tomato sauce
3/4 cup - Daddy Hern's Hickory flavored sauce

Soak each 12 oz package of beans separately overnight in 1 quart of water. In the morning, add more water so that the beans are totally covered. Sprinkle each batch of beans with 1 teaspoon of salt. Bring each batch to boil. Then cover and simmer on low heat until beans are barely tender (90 minutes). Drain beans, but save the liquid. Place the bacon ends in a deep casserole dish. Add the beans, bay leaves, onions, leeks, brown sugar, tomato sauce, and barbecue sauce. Pour in enough bean liquid to just cover the beans. Bake covered at 275 degrees F for 5 to 6 hours or until the beans are tender. Taste for final seasoning by adding more salt, pepper, or brown sugar.

Daddy Hern's Honey Burgundy Prime Rib Roast

4 - rib prime roast ( approx 6 lbs, trimmed of excess fat and tied )
3 Tbsp - extra-virgin olive oil
3 Tbsp - minced garlic
3 Tbsp - minced shallots
1 Tbsp - finely chopped fresh thyme
3 Tbsp - kosher salt
4 teaspoons - freshly ground black pepper
¼ cup - Daddy Hern's Honey Burgundy barbecue sauce

Remove the meat from the refrigerator at least 1 hr, but not more than 2 hrs, prior to roasting to bring meat to room temperature. Preheat the oven to 450 degrees F. In a small dish, stir together the olive oil, garlic, shallots, thyme, salt, black pepper, and the barbecue sauce until well mixed. Untie the roast and evenly spread the mixture on all sides. Place the roast back onto the bones and tie it up again with kitchen twine. Place roast, bone side down, in a heavy-duty roasting pan. Let cook undisturbed for 25 minutes. Reduce heat to 300 degrees F and continue roasting for an additional 90 minutes. Remove from the oven and let it sit covered with aluminum foil for about 20 minutes before carving

Daddy Hern's Cajun Garlic Burger

1 lb - lean ground beef
1 - egg
1/2 cup - bread crumbs
2 teaspoons - Daddy Hern's Cajun Garlic Rub
1 Tbsp - olive oil
4 - hamburger buns

Place the ground beef in a large mixing bowl. Thoroughly mix the egg, bread crumbs, and cajun garlic rub into the ground beef. Then shape meat into 4 patties. Head the olive oil in a lage non-stick skillet over a medium heat. Cook the patties for 5 minutes on one side, then 5 minutes on the other side. Turn patties again and cook an additional 2 to 3 minutes on each side. Make sure the patties are thoroghly cooked. Place the patties on the buns and dress with your favorite coniments.

Daddy Hern's Rosemary Coriander Lamb Chops

8 - lamb chops, about 1 inch think (2 lbs)
Daddy Hern's Rosemary Coriander Dry Rub
1/2 cup - Daddy Hern's Honey Burgundy BBQ Sauce

Preheat broiler. Trim fat from chops. Gernerously sprinkle the Rosemary Coriander dry rub on both sides of the lamb chops. Place chops on an unheated broiler pan. In a small bowl, mix 2 Tbsp of the dry rub with the honey Burgundy Sauce. Brush some o fthe BBQ sauce / rub mixture on the chops. Broil Chops 3 to 4 inches from the heat for 5 minutes. Turn the chops and brush on the BBQ sauce / rub mixture and let broil for 5 to 10 minutes more or until the cops reach a medium doneness (160 degreesF)
